Not only did he use the town as a base for fishing, Cojímar was the background for one of his most famous works, The Old Man and the Sea. The “old man” in the title of the book was reputedly shaped after his guide, Gregorio Fuentes, a Cojímar local. Then, meet with the chef of Café Ajiaco, where you will learn how to make delicious Cuban food and hear the stories of those leading the lesson. We will also take a mixology lesson on Cuban drinks at El Divino Restaurant, where we will enjoy lite bites and a welcome cocktail.

After breakfast, we will depart for the Valley of Viñales. Just a few hours from Havana, this UNESCO site is a unique landscape surrounded by hills with vertical sides and rounded tops, called mogotes (pin-cushion hills). The valley is surrounded by a lovely valley with rich, red earth tones and majestic palm trees in the Pinar del Río province. This is one of Cuba’s most fertile areas and where some of the world’s best tobacco is grown, harvested, dried and processed. You will explore the Cueva del Indio (Indian’s Cave), one of the oldest known caves in Cuba, where sailing is permissible through a small underground river that is about 400 meters in length. Next, you will go to the Mirador Los Jardines, where you will be able to admire the Viñales Valley in its entirety. Next, we will visit Finca Paraíso. Here we will tour the farm, enjoy lunch onsite, and meet with the owners of the farm. Here we will gain valuable insight about the food business in Cuba. After lunch, we will also visit the Mural de la Pre-Historia, a 120 meter tall replica of prehistoric paintings on a mogote or steep-sided hill. The day will end with a farewell dinner at an upscale restaurant in the City of Havana.
